Meatless Tuesdays

In an effort to eat less meat these days I have been trying to introduce at least one day a week to have a meatless dinner time. Easy enough you say. But not when you have a carnivore of a husband who likes his meat and potatoes. Me on the other hand could go w/out meat more than one day a week.

Supper yummy. We only had sage and green onions on hand but it was still yummy. I plan on making it again next week but this time more as a side dish than our main course. Give it a go!
